We have been trying out loads of different vegetables and various types of lentils to make some more great soup. One we wanted to share which is delicious, slightly spicy, slightly sweet but very tasty is made with lentils, cabbage and butternut squash.

Spicy Butternut Squash Soup

  • 1 x dessert spoon of olive oil
  • 1 x  medium onion chopped
  • 2 x cloves of garlic chopped
  • 1 x Teaspoon of ginger and cinnamon curry paste
  • ½ pint of vegetable stock
  • 1 x large Butternut Squash cubed
  • 1 x small cabbage or ¼ of a large Cabbage chopped
  • 1½ oz of yellow lentils

To make:-

  1. Put the olive oil in the pot to heat gently, meanwhile chop the onion and garlic and then add to the warm oil, cook until onions soften then add the curry paste. Stir well.
  2. Add the stock, mix and then add all remaining ingredients.
  3. Bring to the boil and then simmer for about an hour or until the lentils are soft. Check the soup and stir every so often. If needed add some more hot water or stock if you don’t want the soup to be too thick or the pot to boil dry.
  4. When ready, set aside for a few minutes to cool and then pop in the blender – if you find the soup too thick just add some more liquid, stir/blend and then serve with crusty bread. Delicious !
